The beginning of non-traditional ingredients

It's true, Chicory was one of the first beers we started brewing at our pub back when it opened in 1995. It's a dark beer made with a bunch of roasted chicory, organic Mexican coffee and licorice root. We use Simcoe and Warrior hops, as well as pale, roasted and oatmeal grains. Back in 1995, we had a teeny, tiny brewing system and had to brew all day, every day to keep the bar stocked. Brewing with the same four ingredients got really boring really quickly. That's when Dogfish Head founder Sam Calagione's hunger to venture off the beaten path kicked in and he started adding some non-traditional ingredients. The roasty and delicious Chicory Stout is a fantastic food beer. It pairs very well with chocolate ... trust us!

What's it taste like?

Dark and opaque with a cream colored head


Strong roasted coffee, incredible

Roast coffee with some vanilla and licorice

Slightly dry, medium body, some lingering bitterness
